Middle East buyers do not purchase “GOST grades” in the abstract — they purchase contractual specifications that mills, government tenders and traders can enforce. Buyer-Market Requirements vs a GOST Encyclopedia
Russian classification and GOST methods describe how origin quality is measured. Destination buyers care about the numbers that appear in the SPA and the independent certificate: protein, gluten, falling number, moisture, test weight, impurities, damaged kernels and sanitary limits. Map GOST language into those contract fields — do not paste a standard number alone and assume the mill will accept it.
Protein Bands Preferred Across the Middle East
- 12.5% protein — benchmark milling band for many Gulf and Levant flour programs;
- 13.5% protein — premium / high-protein blending or stronger flour targets;
- 11.5% protein — blending, soft flour or feed-adjacent uses where contracts allow;
- always pair protein with wet gluten and falling number when baking performance matters.
Contaminants, Mycotoxins and Sanitary Limits
Tenders and private mills increasingly write explicit caps for foreign matter, insect damage, ergot, sprouted kernels and mycotoxins. Confirm whether limits are tested at loading, on arrival, or both, and which laboratory method is contractual.
Mapping GOST Grades to Contract Specs
A practical approach: (1) state the commercial grade band the mill needs; (2) list numeric minima/maxima for each parameter; (3) name the analysis methods; (4) state that loading-port independent certificates are final (or define the claim window). Use GOST or ISO method references only where both parties understand them.
Rejection and Claim Clauses That Protect Buyers
Rejection language should define: which parameters are rejectable vs price-adjustable; sampling rules; time limits for claims; and whether a second analysis is allowed. Vague “subject to buyer satisfaction” clauses create disputes — precise tables reduce them.
Spec Checklist by Destination Type
- Private mill: protein + gluten + FN + moisture + test weight + contaminants;
- Government / institutional tender: full published tender sheet + documentary checklist;
- Trader / re-export: certificates that survive onward customs and bank scrutiny;
- Feed-adjacent wheat: mycotoxins and impurities may dominate over gluten.
